Well… that was a long break, wasn’t it?? To say that I have been busy seems like a total cliche, but unfortunately, it’s true. Let’s see, the last time I posted on the blog I was living in Memphis… Is that right? I honestly don’t remember, but, sure. Let’s go with Memphis. My last post was about traveling to Paris and how to remain paleo. Since then I have ventured from Paris to Nashville, Memphis, Huntsville, AL, all the way down to Sarasota, FL. And I’m spending a month (maybe two) in Edwards, CO. I was living in Sarasota with my brother, Jake, at the beginning of Sept. through the end of Dec. That was a nice stretch to have with him, catch up with old friends and meet some new. Now, I’m in Edwards, CO, which is a few miles away from Vail and Avon, and I’m here with my mom, some of my cousins and my type II diabetic Grandmother, who has been smuggling sweets like it’s her job. A couple of weeks ago I went to Paris with my mom and brother. This was my fourth trip, and I was so excited to go back! I actually missed it. I’ve never cared for the city before, but something was different. This time, I was on a newfound mission. I was recently at Disney where one day I ate only ice cream, pretzels and chocolate… for the entire day! And it was glorious, but soon, that “glorious” feeling passed and I felt awful. I knew I didn’t want to feel that way while we were overseas, so I made the decision to really try to eat as clean and Paleo-friendly as possible, although, I did allow dairy (fromage – duh!). I was extremely nervous and kept thinking of the amazing patisseries that surrounded our usual spots, but then, I reminded myself that I’ve eaten all of the Parisian “must-haves” on previous trips. The bread? Check. Onion soup? Check. Macarons? Check. Pain au Chocoalte (chocolate croissant)? Check. Croque Monsieur/Madame? Check. Crepes – both nutella and savory? Check and check. Escargot? You bet, and it’s delicious! Oh, and Paleo.
Tonight, I am craving chocolate and not just any chocolate. I am craving Johnny Depp’s Chocolat. Swoon… That may be the sexiest I’ve ever seen Mr. Depp -ok, not really, because I am a major sucker for the “Jack Sparrow” look. Go ahead and make fun of me all you like. You know you dig a sexy pirate (hubba, hubba).
I always want to sip on hot chocolate while watching the movie, and that could be because Vianne serves it while having some of the deepest conversations with the important characters. Continue reading
I travel quite a bit – understatement of the year? Possibly. Since I’ve gone Paleo, I have to figure out how to remain eating Paleo whilst traveling (whilst… makes me feel all fancy).
We all love a good Mexican meal, and enchiladas happen to be one of my favorite items to order. I don’t eat Mexican food except for a rogue meal, and it’s been a few months since I’ve gone rogue at a Mexican restaurant. So, when I came across PaleOMG’s recipe for Paleo enchiladas, I was ecstatic. My first thought, of course, was “but what about the tortillas?”. Then I saw she used sweet potatoes – genius! So, I went to the store and bought all the ingredients I didn’t already have on hand. A few days later, still no enchiladas…
Some mornings are just made for cooking. I’m currently in Sarasota, FL, visiting my mom and brother. Thursday, the weather was pretty drab, but on the bright side (keep on the sunny side..) I was able to stay in and cook up some recipes I’d been dying to try. Luckily, I planned ahead of time and bought all of my groceries Wednesday, so “yay” to me not having to drive in that mess. Pound it.
